FRESH APPLE-WALNUT CAKE 
1 c. butter
2 c. sugar
3 eggs
3 c. sifted all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 c. mace
3 c. chopped apples, peeled and cored
2 c. chopped walnuts
1 tsp. vanilla

Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Mix and sift flour, soda, salt, cinnamon, and mace together. Add to butter mixture gradually. Stir in vanilla. Batter will be stiff. Stir in apples and walnuts. Spoon into greased and floured 10-inch tube pan. Bake at 325 degrees for 1 1/2 hours. Let cool in pan for 10 minutes. Remove and cool.

During baking, a macaroon-type crust forms on the top, so this cake needs no icing.
