FRESH APPLE CAKE WITH WALNUTS 
2 c. flour (unsifted)
2 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
4 c. pared, finely diced (about 1 1/2 lbs.) apples
1/2 c. chopped walnuts
1/2 c. butter
2 eggs

Preheat oven to 325 degrees. Grease 9x13x2-inch baking pan. Into large bowl sift flour with sugar, baking soda, cinnamon, nutmeg, salt. Add apples, nuts, butter, eggs. Beat until just combined - it will be thick.

Turn into prepared pan. Bake 1 hour or until top springs back when lightly pressed with fingertip. Cool in pan on wire rack. Serve warm; cut into squares. Top with whipped cream. Yield: 10-12 servings.
