FRESH APPLE POUND CAKE WITH
BLACK WALNUTS
 
2 c. sugar
1 1/2 c. oil
3 large eggs
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. vanilla
3/4 c. flaked coconut
1/2 c. black walnuts
3 c. fresh, firm diced apples

Mix sugar and oil well, then add eggs (one at a time) and beat well. Add flour mixture and stir in vanilla, nuts, coconut and apples.

Bake in tube pan (well greased and floured) and bake at 325 degrees for 1 hour. Needs no icing - freezes well.

This is one of my "go-to" recipes, always a big hit with friends and family. To lighten it up a bit I use 3/4 cup oil and 3/4 cup applesauce and replace half of the sugar with Splenda 1 extra Tsp flour. Texture will be a little firmer but the apples add tons of moisture and you will never miss the saved calories.

This cake is moist and delicious! I followed the recipe as written, but I couldn't find black walnuts so I substituted regular walnuts. I'm sure black walnuts would give it a unique flavor so I'll be on the lookout for them. It was amazing while it was warm, so you might want to consider heating slices in the microwave. Next time I'll dribble a glaze or sprinkle powdered sugar over it, just to give it a nicer presentation, but this recipe will go down as one of my favorites.
