APPLE WALNUT RING CAKE 
1 c. butter
2 c. sugar
3 eggs
3 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. mace
2 tsp. vanilla
3 c. peeled, chopped apples
1 c. chopped walnuts, optional

Cream butter and sugar until fluffy, add eggs one at a time, beating well after each addition. Sift together flour, baking soda, salt, cinnamon, and mace; add gradually. Stir in vanilla, apples and walnuts. Spoon into greased and lightly floured 10 inch tube or bundt pan. Bake at 325 degrees for 1 1/2 hours. Let cool in pan 10 minutes.
