LEMON LOAF 
1 c. sugar
1/2 c. shortening
2 eggs
1 1/2 c. flour
1 tsp. baking powder
Pinch of salt
Grated rind of 1 lemon
Scant tsp. vanilla
1/2 c. milk
1/2 c. nutmeats
1/4 c. sugar in juice of 1 lemon

Cream sugar and shortening. Add eggs, flour, baking powder and salt. Makes a stiff dough. Add 1/2 cup milk alternately with dry ingredients and grated lemon rind.

Bake 1 hour at 325 degrees in greased loaf pan. While still warm, pour over the sugar and juice of 1 lemon mixture.
