SALMON - LEMON LOAF | |
1 (1 lb.) can salmon (reserve 1/4 c. liquid) 1 tsp. grated lemon rind 2 tbsp. fresh lemon juice 1/2 c. chopped onion 1 1/2 c. soft bread crumbs 1/8 tsp. Tabasco sauce 1 tsp. sugar 1/8 tsp. pepper 2 eggs, slightly beaten 1/4 c. chopped green pepper Flake salmon, combine with other ingredients. Moisten with salmon liquid. Spoon into oiled quart loaf pan. Bake in 350 degree oven 35-40 minutes. Garnish with lemon slices. Makes 4 servings. |
