GRILLED CHEESE AND AVOCADO
SANDWICH
 
sliced bread
sliced cheese (American, Cheddar or your choice)
butter
small avocado (one for each sandwich), sliced into 1/4-inch slices
sweet onion, sliced thin (optional)
prepared yellow mustard (optional)
salt and pepper, to taste

Warm a non-stick skillet.

Spread a thin layer of butter on one side of bread and place butter side down in warm skillet. Add layer of sliced avocado, salt and pepper and optional onion then cheese. You may want to spread a very thin layer of mustard on inside of top piece of bread. Top with bread and lightly butter outside of bread.

Cook covered very loosely with foil until browned. Turn and cook other side until brown.

Serve hot.
