GRILLED CHEESE AND MASHED POTATO SANDWICH | |
This idea came to me when I wasn't sure what to make for lunch on a summer afternoon. I had leftover baked potatoes from the barbecue, and so I came up with this recipe. Enjoy! - Brandon. 2 bread slices 2 slices processed cheese 1/2 cup mashed potatoes (or more, if desired - not too liquidy) 4 slices Mozzarella cheese canola spray or butter Preheat stove heating element to 8. Place your desired frying pan and let sit to warm up. Butter two slices of bread on a cutting board. Place one slice of processed cheese on the bread. Place mashed potatoes on top of this slice, but not too much. Now, place 4 slices of real Mozzarella cheese on the mashed potatoes. Next, top with a thin layer of mashed potatoes, followed by the second processed cheese slice. Spray frying pan with canola spray, or grease with butter. Place sandwich in preheated frying pan. NOW, place top bread slice on sandwich. Compress the sandwich slightly with pancake flipper. When one side of the sandwich is golden brown, place flipper all the way under the sandwich and flip. Note: BE CAREFUL when flipping, as the sandwich will be very thick. It takes practice! :) When the other side is golden brown as well, take off of frying pan and serve as desired. ENJOY!
