SALMON LEMON LOAF | |
1 (1 lb.) can salmon, include liquid 1 tsp. grated lemon rind 2 tbsp. lemon juice 1/2 c. onions, chopped 1 1/2 c. bread crumbs 1/8 tsp. Tabasco sauce 1 tsp. sugar 2 eggs, slightly beaten 1/2 c. fresh pepper, chopped Salt & pepper to taste Flake salmon, combine all other ingredients. Spoon into oiled quart loaf pan. Bake at 350 degrees uncovered, with lemon slices over the top for 40 minutes. Serve with a white mushroom or lemon sauce. |
