PEA POTATO CASSEROLE 
1 can English peas
1 can mushroom soup
1 jar pimentos
1 bell pepper, diced
4 c. cubed potatoes
1 1/2 to 2 c. grated Cheddar cheese
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
Dash of cayenne pepper
1 c. milk

Cook bell pepper in microwave or saute in a little butter. Boil potatoes until tender. Make sauce with butter, flour, salt, cayenne pepper, and milk. Add soup and pimentos. Dissolve 1 cup cheese in mixture. Mix all ingredients in sauce and pour in greased casserole dish. Cover with remaining cheese. Bake 20-30 minutes at 300 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
