SHERRY'S LOW-FAT ICE CREAM SANDWICHES | |
1 cup Bisquick Heart Smart baking mix 1/3 cup unsweetened cocoa powder 1/2 cup sugar 1/3 cup packed light brown sugar 2 egg whites 2 tbsp. butter, melted 2 tsp. vanilla 2 tbsp. 1% milk 3 cups low-fat ice cream, softened Preheat oven to 350°F. Line baking sheets with parchment paper. In a bowl, combine Bisquick and cocoa powder. Reserve. In a bowl with mixer on medium speed, beat sugar and brown sugars, egg whites, butter and vanilla until combined. Stir in Bisquick mix and milk until dough forms. Drop by heaping tablespoonfuls, 2" apart onto baking sheets. Bake 6-7 minutes, or just until center is set. Cool 10 minutes. Cool completely on racks. Spread 1/4 cup ice cream on bottom of each of 12 cookies. Top with remaining cookies. Wrap in plastic, freeze at least 2 hours. CALORIES: 174, FAT 4 grams, Saturated Fat, 2 grams.
