ENCHILADAS (BEEF) 
3/4 lb. ground beef
1 med. onion, chopped
2 c. refried beans
1 tsp. salt
1/8 tsp. garlic powder or 1 clove garlic mashed
12 tortillas
2 cans enchiladas sauce

Brown meat and onion in skillet. Stir in beans, salt, garlic and heat until bubbly; cover and keep warm. Pour 1 can enchilada sauce in bottom of 9x13 inch pan. Place about 1/3 cup beef-bean filling on each tortilla and roll to enclose filling.

Place, flap side down, in the sauce in the bottom of the pan. Pour remaining sauce evenly over tortillas. Cover with 2 cups shredded cheddar cheese. Bake uncovered at 350 degrees for 15-20 minutes or until heated through.
