SPINACH SALAD WITH FRUIT AND MACADAMIAS | |
2 tbsp. raspberry vinegar or red wine vinegar 2 tbsp. raspberry jam 1/3 c. salad oil 3/4 lb. spinach 3/4 c. salted macadamia nuts, whole and halves 1 c. raspberries 3 lg. kiwi fruit, peeled and cut into 1/4 inch thick slices Whole chives Salt and pepper With a whisk or in a blender, blend vinegar and jam. Add oil in a thin stream, whisking or blending to make dressing. Mix spinach leaves, half the macadamias, half the raspberries, and all of the dressing on a platter or in a wide salad bowl. Top salad with remaining nuts, berries and kiwi; garnish with whole chives. 8 servings. Do not mix salad before serving portions, because the kiwi fruit loses its bright green color as soon as the dressing touches it. Season individual servings to taste with salt and pepper. This salad is worth every penny it costs. |
