BAKED GRITS 
Grits, prepared
Cheese, Cheddar & Monterey Jack
1-2 eggs
1 can green chilies, chopped & slightly drained

Cook grits according to directions. Remove from heat and stir in cheese, salt and pepper, canned chilies and beaten eggs.

Pour in well buttered casserole dish and bake at 350 degrees about 20 minutes, or until eggs are set. Serve with sauteed mushrooms and sliced tomatoes for an excellent brunch.
