STIR-FRY BROCCOLI (ALSO
ASPARAGUS AND ZUCCHINI)
 
3 tbsp. oil (peanut, olive or corn)
Pinch of ginger (opt.)
1 clove garlic, minced
1 bunch broccoli

Heat wok or skillet and add oil. Mince garlic and add to oil. Add vegetables, cut in 1 1/2" to 2" pieces. Sprinkle with salt and pepper. Stir and fry on medium high heat for about 4 to 5 minutes. Or stir fry for 1 to 2 minutes and cook, covered for 2 to 3 minutes on lower heat. Serve immediately.

Variation: Adding one or two beaten eggs to asparagus makes a nice lunch.
