WEST TEXAS CHOCOLATE CAKE 
1 c. butter
2 1/2 c. sugar
5 eggs
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/3 c. cocoa
1 c. buttermilk
3 tbsp. strong coffee (cool)

Mix together butter and sugar. Add the eggs, beating well. Sift together the flour, soda, salt and cocoa. Add this flour mixture alternately with the buttermilk and coffee to the egg mixture; mix well. Bake in 3 layers at 375 degrees until done. Ice with chocolate butter icing.

CHOCOLATE BUTTER ICING:

1/2 c. butter
1 pkg. powdered sugar
1/3 c. cocoa
2 tbsp. coffee or more if necessary to make icing spreadable
