WILD WALDORF SALAD 
1/2 to 1 c. each brown rice and wild rice
3 c. water
1/2 c. orange juice
1/4 tsp. salt
1 c. each sliced celery and halved red grapes
1 each tart red and green apple, cored, diced
1/2 c. coarsely chopped toasted walnuts
1/4 c. coarsely chopped dried apricots
1 can (8 oz.) pineapple chunks in juice, drained
1 can (12 1/2 oz.) white tuna

DRESSING:

1/4 to 1/2 c. each plain yogurt and pureed ricotta cheese
1 tbsp. each grated orange and lemon rind
Dash freshly grated nutmeg and cloves
1 tbsp. orange juice
1 tsp. sugar, optional
