POTATO CANDY 
1 sm. potato
1 1/2 boxes powdered sugar (you may have to use 2 boxes)
1 tbsp. butter
1/8 c. milk
1 tsp. vanilla

Peel, cook and mash potato. Add butter and milk. Make sure no lumps remain. Next add vanilla and powdered sugar slowly. The mixture will be sticky at first, but knead until stiff enough to roll out. Put candy onto a sugared board and roll to 1/4 inch thick. Spread a thin layer of peanut butter on this. Roll the candy as you would for jelly rolls (make two rolls). Slice and refrigerate for 1 hour. Makes about 50 pieces.

My mother used to make this for us when we were kids. It is so good. I know it sounds like a lot of powdered sugar but the potato and the peanut butter balance it out. So good to see an old fashioned favorite on your site.
