CANDIED SWEET POTATOES 
5 med. sweet potatoes
1/3 c. maple syrup
1 tsp. grated lemon rind
1/2 tbsp. lemon juice
1/8 tsp. ginger
2 tbsp. butter

Cook sweet potatoes in boiling water until nearly tender. Preheat oven to 375 degrees. Pare and cut sweet potatoes in 1/2 inch slices. Place in shallow greased baking dish. Season with salt.

Mix maple syrup with lemon rind, lemon juice and ginger. Cover potatoes with syrup. Dot with butter. Bake on upper shelf of oven for 25 minutes. 4 servings.
