PRISCILLA'S POTATO CANDY | |
1 med. cooked potato 4 oz. shredded coconut 1 lb. confectioners sugar 1/4 c. peanut butter 1 oz. unsweetened chocolate, melted While potato is still warm, mash and add coconut, sugar and peanut butter. Mix until well blended. Spread into an 8 inch buttered pan, pressing smooth with a fork. Spread melted chocolate evenly over top. Chill to set. Cut into 1 inch pieces. |
