1 sm. Irish potato, cooked & drained
1 sm. jar peanut butter, creamy
1 box confectioners sugar

Mix potato and sugar well. Roll out on wax paper. Spread peanut butter over potato mixture and roll up like jelly roll. Chill for a few hours, slice thin and serve.
