IRISH POTATO CANDY | |
1/3 c. unseasoned mashed potatoes 1 3/4 c. powdered sugar 2 2/3 c. coconut Dash of salt 4 sqs. semi-sweet chocolate 1 block paraffin 1/2 tsp. vanilla 1 c. chopped pecans Mix all ingredients well. Roll in small balls. Put on large cookie sheet. Chill until firm. Melt 4 squares semi-sweet chocolate and paraffin in double boiler. Dip chilled balls in mixture and place on waxed paper. Reheat chocolate mixture as needed. |
