IRISH POTATO CANDY 
2 1/2 c. confectioners' sugar
1 pkg. (3 oz.) cream cheese
5 heaping tbsp. coconut
Dash of salt
1/2 tsp. vanilla

Knead all ingredients together. Shape into small balls. Roll in cinnamon. Refrigerate 1 hour. Pick with toothpick to look like a potato. Yield 40. Enjoy!
