SCALLOPED POTATOES 
3 tbsp. butter
2 tbsp. flour
1 1/2 tbsp. salt
1/8 tsp. pepper
3 c. milk
1/2 c. Velveeta cheese
6 med. potatoes, sliced thin
2 tbsp. chopped onion

Make white sauce of butter, flour, salt, pepper and milk. Add cheese. Place 1/2 of potatoes in greased 2 quart casserole. Cover with half the onion and half the sauce. Repeat layers. Bake at 350 degrees for 1 hour. Uncover and bake 30 minutes more.

NOTE: You may want to put casserole dish on cookie sheet while baking in case of bubbling over.
