CRANBERRY CHOCOLATE CHIP COOKIES 
1/2 c. butter
1/2 c. brown sugar
1/2 c. oil
2 eggs

1 tsp. vanilla
1/4 tsp. salt
1 c. chopped nuts
1 c. chocolate chips
2 c. whole wheat flour
1 tsp. baking soda
1 c. cranberries
1 c. rolled oats

Drop on ungreased cookie sheets and bake at 350 degrees for 10 to 12 minutes.

I had my doubts about a cookie recipe with only 1/2 c sugar in it, but these are quite good. I used 1 c whole wheat and 1 c all-purpose flour to mellow out the flavor. I also used dried cranberries (which might be what was intended; the recipe wasn't clear) and toasted the nuts first. I used a small scoop for the dough and baked them on parchment paper. They do not spread out at all, so if you want them flatter, press them with the bottom of a glass before baking. Overall, worth the effort!

I mixed according to standard cookie making: creamed butter & sugar, added eggs one at a time, then vanilla. In another bowl I mixed flower, salt & baking soda. (I did use 1 cup white and 1 cup wheat.) I added the dry into the wet a little at a time then incorporated the cranberries and chocolate chips. (I omitted the nuts.) These cookies worked well baked into bars by spraying oil into a rectangular baking pan. They are dense and flavorful, great with coffee or tea and got rave reviews from my co-workers!
