TACO STEW | |
2 lb. ground beef 1 chopped onion 1 chopped green pepper 1 env. taco seasoning 2 (15 oz.) ea. cans whole corn, drained (or 1 "family size") 3 (15 oz. ea.) cans pinto beans 1 (10 oz.) can Rotel diced tomatoes w/ green chilies 1 (15 oz.) can diced tomatoes (Hunts) 1 env. dry HIDDEN VALLEY® Ranch dip mix SUGGESTED TOPPINGS: dairy sour cream shredded cheddar cheese crackers or Fritos Brown ground beef with onions and green peppers. Drain and prepare with taco seasoning as directed on packet. Set aside. Set Crock-Pot to MEDIUM (middle setting). In Crock mix whole kernel corn, pinto beans, Rotel tomatoes, diced tomatoes and dry Ranch dip. Mix very well. Stir in hamburger mixture in pot. Mix very well. Let cook in crock for 45 to 60 minutes. Makes many servings!!! Top each bowl with a spoonful of dairy sour cream and a sprinkling of cheese. Serve with crackers or Fritos!!! Submitted by: B. Talley |
