GRANDPA'S TACO SALAD | |
1 lb. ground beef 1 garlic clove, minced 1 medium onion, diced 1 (15 oz.) can refried beans 1 (8 oz.) can tomato paste 1 can of water (use empty paste can) 1 1/2 pkgs. taco seasoning (I use Old El Paso) TOPPINGS: white corn Tostitos (round chips) shredded lettuce 1 large tomato, diced shredded cheese (I use Mexican "fiesta" blend) black or green sliced olives dairy sour cream taco sauce or picante sauce Fry hamburger, garlic and onion. Drain grease. Add refried beans, tomato paste, water and taco seasoning. Simmer for 15 to 20 minutes. While simmering put your chips in the oven to warm up, about 7 minutes. When done take chips then crunch them on a plate, add taco beef mixture, then top with lettuce, tomato, cheese, olives, dairy sour cream, taco or picante sauce. And enjoy!! Variation: If you want a low-fat version then substitute ground turkey for ground beef, use low-fat cheese and dairy sour cream, and use whole grain chips. Submitted by: Suzanne |
