CHINESE CHICKEN SALAD 
6 c. shredded cabbage
3 green onions, chopped
2 to 3 c. shredded chicken
2 tbsp. sugar
1/3 c. vegetable or olive oil
1/4 c. rice vinegar
1/4 tsp. pepper
1 pkg. Top Ramen noodles
1/3 c. sliced almonds
3 tbsp. sesame seeds

Combine cabbage, green onions, and chicken in one bowl. In another bowl mix sugar, vinegar, pepper and oil. Combine with packet from Top Ramen. Pour over salad. Crumble noodle and nuts, add just before serving. Sesame seeds are an optional addition and are a good source of calcium.

Servings: 6

Nutrition (per serving prepared using 3 cups cooked chicken): 400 calories, 25.4g total fat, 52.5mg cholesterol, 233.7mg sodium, 483.3mg potassium, 25.9g carbohydrates, 3.9g fiber, 7.6g sugar, 22.6g protein, 118.5mg Calcium, 191.4IU Vitamin A, 3.5mg iron, 34mg Vitamin C, 4.7g saturated fat, 4.4g polyunsaturated fat, 7.6g sugar.

Sodium may be reduced by discarding Ramen flavoring packet.

I made a big bowl on Sunday to divide up into tupperware for my lunches all week - I add more carrots and celery for the crunch, used prepared cabbage from the bag, and tore up a rotisserie chicken from the grocery store - yummy! Keeps me from buying a school lunch each day, this salad fills me up, and I think its healthy to eat.

I needed a quick idea for a spontaneous pot luck. The ease in which this came together was great and the flavor amazing. My husband says this is a keeper! I used already prepped cabbage and canned chicken and had this whipped together in less that 15 minutes.
