OATMEAL CAKE 
1 c. quick cooking oatmeal
1/2 c. Crisco
1 1/4 c. boiling water
1 c. light brown sugar
1 c. granulated sugar
2 eggs
1 1/3 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla flavoring

Pour boiling water over oatmeal. Let stand while you cream Crisco and brown sugar. Add granulated sugar, cream again. Add eggs, 1 at a time, beating well after each. Sift all dry ingredients together. Whip oatmeal. Then add cream mixture and dry ingredients alternately. Beat well. Pour into greased and floured oblong pan. Bake about 30 to 35 minutes at 350 degrees. Test for doneness with toothpick.

OATMEAL CAKE ICING:

1 stick melted butter
1 c. brown sugar
1 c. coconut, or chopped nuts
2 egg yolks

Mix all ingredients together. Add enough cream to spread evenly on cake. Place in oven and brown lightly.
