OATMEAL CAKE 
CAKE:

1 c. quick oatmeal
1 1/2 c. hot water

Pour over oatmeal, cover and let stand 20 minutes.

1 c. granulated sugar 1/2 c. butter 2 eggs

Beat until creamy and add: 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. vanilla 1 tsp. cocoa (opt.)

Add to batter. Add oatmeal last. Bake at 350 degrees for 30 to 40 minutes in greased and floured pan.

TOPPING;
1 c. brown sugar
6 tbsp. melted butter
1/2 c. chopped nuts
1 c. coconut
1/4 c. Milnot or Pet
1/2 tsp. vanilla

Mix well, spread over slightly cooled cake. Place under broiler and watch until brown.
