BLACK COD WITH CHINESE MUSTARD
SAUCE
 
1/2 to 3/4 lb. black cod steak
1 tbsp. sesame oil
2 tbsp. shoyu (Japanese soy sauce)
1 tbsp. mild honey
1 tsp. dry mustard
1 tbsp. mirin or sake
3-4 tbsp. toasted sesame seeds

Brush black cod steak with a mixture of sesame oil and 1 tablespoon shoyu. Place over coals and grill for about 7-8 minutes on a side. Blend 1 tablespoon shoyu with honey, dry mustard, and mirin or sake. Let the sauce sit for 10 minutes then taste; add more mustard powder if you like it very hot. Put sesame seeds in a small bowl, then mustard sauce in another. Pass both with the fish. Serves 2.
