BEST BLUEBERRY MUFFINS | |
6 tbsp. butter 1 1/4 c. sugar 2 lg. eggs 2 c. flour 1/2 tsp. salt 2 tsp. baking powder 1/2 c. milk 1 pt. washed blueberries 2 tbsp. sugar Cream butter and sugar. Add eggs, one at a time, and beat. Sift dry ingredients together. Add to batter, alternating with milk. Remove 1/2 cup blueberries and crush. Add to batter. Dry remaining blueberries and add to batter by hand. Fill cupcake papers 2/3 full. Sprinkle tops with sugar. Bake at 350 degrees for 30 minutes. Yield: about 18-20 muffins. |
