CHICKEN CUTLET PARMESAN 
2 (6 oz.) boned chicken cutlets
1 tbsp. flour seasoned with pepper
1 tbsp. chopped garlic
1 tbsp. chopped scallion
1/4 c. chicken stock
Vegetable spray
1 oz. low fat shredded Mozzarella
2 c. Tomato Sauce

Dust the boned chicken cutlets lightly with flour. Spray a fry pan with vegetable spray. heat pan and quickly saute the cutlets. After the cutlets have browned, place them in a shallow baking pan. Add the garlic, scallion and chicken stock. Top with tomato sauce and shredded Mozzarella cheese. Bake at 350 degrees until cheese is browned and bubbly.

Serving equivalents: 1 protein; 1 dairy; 1 vegetable
