CHICKEN CUTLETS PARMESAN 
3 tbsp. fine dry bread crumbs
3 tbsp. grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper
4 chicken or turkey breast cutlets, about 1 1/4 lbs.
1 egg, slightly beaten
1 tbsp. oil
1 tbsp. butter

Mix bread crumbs, cheese, salt and pepper. Dip cutlets in egg, then coat with crumb-cheese mixture. Fry in hot oil and butter in skillet over medium heat about 5 minutes on each side or until golden and done. Makes 4 servings.
