EASY CHICKEN WITH ONIONS 
6 "meaty" chicken breasts or legs
12 to 16 sm. whole white onions, peeled - or a jar of onions (10 to 12)
4 or 5 carrots
1/4 c. red cooking wine
1 can cream of mushroom soup
Salt and pepper
1/4 lb. Cheddar cheese, freshly grated

Place chicken in baking dish - add onions. Peel carrots, slice thin and add. Mix soup and wine - pour over chicken. Grate cheese over top. Refrigerate until ready to bake. Then place in 350 degree oven - covered for 45 minutes. Uncover and continue baking for 35 to 45 minutes more.
