IRISH MEAT LOAF | |
1 1/2 lbs. ground beef 1/2 lb. ground pork 1/2 c. minced onion 2 c. peeled, chopped apples 1 pkg. frozen chopped broccoli 1 egg 3 c. bread crumbs 3/4 c. milk 1 tsp. salt 1 1/2 c. potato flakes 1/2 c. shredded cheddar cheese In mixing bowl, combine beef, pork, bread crumbs, egg, onion, milk and salt; lightly mix to blend. Stir in apples. Shape into a loaf on jelly roll pan. Cook 45 minutes at 350 degrees; drain off fat. Prepare potato flakes according to directions. Combine potatoes with broccoli, cooked and drained; frost loaf with mixture. Top with shredded cheese and return to oven for 15 to 20 minutes more. Let stand 5 to 10 minutes before removing to a platter for serving. |
