TAHITIAN CHICKEN SALAD | |
3 c. chopped, cooked chicken 1 (15 1/2 oz.) can pineapple chunks, drained 1 c. sliced celery 1/3 c. dry roasted peanuts 1/4 to 1/3 c. mayonnaise 1 tbsp. sweet pickle relish 1/2 tsp. curry powder lettuce leaves Combine first 4 ingredients; set aside. Combine mayonnaise, relish, and curry powder; add to chicken mixture, and toss gently. Serve on lettuce leaves. Yield: 6 servings. |
