SEAFOOD QUICHE 
4 tbsp. butter
1 stalk broccoli, tops only
3 med. green onions, finely chopped, green portion too
1 can white crab meat
1 can whole peeled shrimp
1/3 c. dry white wine
1 c. half & half
1 deep dish pie crust
3 eggs
3/4 c. grated Swiss cheese
3/4 c. grated fresh Parmesan cheese
Salt & pepper to taste
Garlic powder to taste
Cajun spice to taste

Saute broccoli tops in butter 1 to 2 minutes. Add green onion and saute another 2 minutes. Add crab, shrimp, wine and spices. Simmer a few minutes. Remove from heat and let cool slightly.

Beat 3 eggs, add half and half, mix. Add fish mixture and cheeses and stir. Pour into deep dish pie crust and top with some grated cheese. Bake in a preheated oven at 450 degrees for 10 minutes then reduce heat to 325 degrees and bake for 30 minutes until golden brown on top. May need to cover crust with foil while baking.

This is a complete recipe! It fills one pie tin or separate quiche dishes. Very tasty. If you like it spicier add Cajun seasons or a dash of Tabasco.
