SEAFOOD QUICHE 
9-inch pie pan with flaky pastry crust, chilled
2 tbsp. minced scallions or shallots
2 tbsp. butter
1 1/2 c. any combination of seafood (clams, scallops, lobster, etc.)
3 eggs, lightly beaten
1 1/2 c. heavy cream
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. nutmeg
1/4 c. grated Gruyere or Swiss cheese
2 tbsp. minced parsley

Saute minced scallions or shallots in butter. Add seafood and cook for 2-3 minutes. In a bowl, combine the eggs with cream, salt, pepper and nutmeg. Add scallions and seafood. Pour mixture into pastry shell. Sprinkle the top with grated cheese and minced parsley. Bake at 375 degrees for 30-35 minutes.

Serves 8.
