BEEF CHEESE CASSEROLE 
1 (16 oz.) pkg. penne pasta
1 1/2 c. fresh sliced mushrooms
2 tbsp. olive oil
1 small onion, diced
1 lb. ground beef
1 (14.5 oz.) can stewed tomatoes (undrained)
1 (8 oz.) can tomato sauce
2 tsp. dried basil
1/2 c. cheese
1/2 grated Parmesan cheese

Preheat oven to 350°F. Spray large casserole dish. Cook penne pasta according to package directions. Heat oil in large pan over medium heat. Add onion and garlic for 2 minutes. Add mushrooms and ground beef. Cook until beef is browned, about 8 to 10 minutes. Stir in stewed tomatoes, juice, tomato sauce and basil; let simmer for 5 minutes. Remove from heat; add pasta to saucepan. Stir in cheese; mix well. Spoon pasta in prepared casserole dish. Sprinkle with Parmesan cheese. Cover and bake 15 to 20 minutes.
