COCONUT POUND CAKE | |
1 1/2 c. Crisco 3 c. flour 2 1/4 c. sugar 5 eggs 1 tsp. baking powder 1/4 tsp. salt 1 c. milk 2 tsp. coconut extract 1 pkg. frozen coconut (6 oz.) Beat sugar and Crisco on high speed for 10 minutes, adding eggs one at a time. Add dry ingredients alternately with milk. Add coconut extract and fold in coconut. Bake in tube pan on over sized loaf pan. Put in cold oven. Set at 325 degrees for 1 hour and 25 minutes. |
