COCONUT POUND CAKE | |
1 1/2 c. shortening or butter 2 1/2 c. sugar 6 eggs 3 c. flour 1 tsp. baking flour 1/4 tsp. salt 1 c. milk (1/2 can be sweetened condensed milk) 1 tbsp. coconut extract 1 c. flaked coconut Cream shortening and sugar until fluffy. Beat in eggs, one at a time. Add dry ingredients, sifted alternately with milk and coconut extract combined. Fold in coconut then pour into Angel food cake pan, which has been lightly greased and floured. Put in cold oven then turn to 325 degrees and bake for 1 1/2 hours or until a toothpick comes out clean. |
