GLAZED SWEET POTATOES AND APPLES 
1 1/2 to 2 lb. sweet potatoes
1/2 c. orange juice
2 tbsp. butter
2 to 3 med. apples
3 tbsp. brown sugar
1 tbsp. corn starch
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 c. nuts

Peel sweet potatoes and cut into 1 inch chunks. In 2 quart casserole mix orange juice, sweet potatoes and butter. Cook covered on high 11 to 13 minutes until tender, stirring once.

Peel and core apples; cut into slices add to casserole with sweet potatoes. Cover and cook on high 2 to 6 minutes until apples are tender but holds its shape.

In a 2 cup glass measure, combine brown sugar, corn starch, cinnamon, salt, 1/4 cup orange juice and 1/4 cup water. Cook on high 2 or 3 minutes until mixture boils and thickens, stirring once. Add nuts and add the whole mixture to the sweet potatoes, toss gently to coat. Cover, cook 1 minute to heat.
