MARMALADE - GLAZED SWEET
POTATOES
 
2 tbsp. butter
1/3 c. orange marmalade
1/4 tsp. salt
1 tbsp. lemon juice
1 (17 oz.) can sweet potatoes, drained

Combine butter, marmalade, salt and lemon juice in skillet. Cook a few minutes until thickened, stirring. Add sweet potatoes and cook slowly, turning frequently until they are glazed. Makes 4-6 servings.
