POTATO CHEESE PUFF 
1 lb. potatoes
3 eggs
4 oz. cheese
1 blade chive, scallion
1/8 tsp. paprika
1/2 green pepper (sm.)
1/8 tsp. salt
1/8 tsp. black pepper
1/8 tsp. mustard

1. Wash peel and dice potatoes and place in boiling water cooking until done.

2. Grate cheese.

3. Chop green pepper and chives.

4. Separate eggs.

5. Mash potatoes and seasonings (Paprika, salt and pepper) together. Beat egg yolks into the mixture.

6. Add cheese to mixture.

7. Beat egg whites until nearly firm and add to the mixture.

8. Bake in an oven at 375 degree until puffed and golden brown.
