BEST CARROT CAKE 
2 c. sugar
1 1/2 c. Wesson oil
4 eggs
1 tsp. salt
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
3 c. raw grated carrots
1/2 c. ground walnuts

Using mixer, mix oil, sugar and eggs. Add mixed dry ingredients. By hand fold in carrots and nuts. Blend well. Bake 50 to 60 minutes at 350 degrees or until cake pulls away from sides of pan. Use 9 x 12 greased cake pan.

ICING:

1 lb. powdered sugar
3/4 stick butter
2 tsp. vanilla
1 (8 oz.) pkg. cream cheese
1 c. ground walnuts (optional)

Cream all ingredients together at room temperature. Spread over slightly warm cake.
