BEST EVER CARROT CAKE AND ICING 
3 eggs, well beaten in lg. bowl
2 1/2 c. grated carrots in loose cup
2 c. sugar
1 1/2 c. oil
3 c. flour
1 tsp. salt
2 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. vanilla
2 1/2 c. crushed pineapple
1 c. chopped walnuts

Mix all ingredients well. Pour into ungreased 9x13 inch pan. Bake at 350 degrees for 40-45 minutes.

ICING:

1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1 c. chopped walnuts

Beat just enough milk in to make it spreadable. Serves 12.
