VERY BEST CARROT CAKE 
2 c. sugar
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
7 oz. coconut
2 c. shredded carrots
1 c. chopped walnuts

Mix together and set aside. In another bowl, combine: 3 eggs 2 tsp. vanilla 1 c. crushed pineapple

Mix well and then add to the dry ingredients. Spread in well greased 10"x15" pan. Bake at 350 degrees for 35 to 45 minutes. When cool, frost with the following cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. pkg. cream cheese
1/4 c. butter
1 1/2 c. powdered sugar
1/4 tsp. salt

Blend. Add drops of hot water if needed for smoothness.
