STRAWBERRY ZUCCHINI JAM
4 c. grated, peeled, zucchini 1/2 c. lemon juice 2 pkgs. strawberry, unsweetened Kool Aid 1 pkg. pectin 8 c. sugar Mix everything but sugar and bring to rapid boil, add sugar and boil 5 minutes. (Good rolling boil.) Pour into bottles and seal.

Very good recipe... I have been looking for it for sometime now. Used to make this when my children were very young. My son couldn't say Zucchini, so he would ask for ".. a peanut butter and bikini sandwich." I have got to make this for him .. for when he next comes out our way.
