CASHEW RICE | |
1/4 c. butter 1/3 c. chopped green onion 2 c. chicken broth 1 c. uncooked white and wild rice mixed 1/2 tsp. salt 1/2 c. cashews, coarsely chopped 1/4 c. chopped fresh parsley In large pan, melt butter. Saute onion until tender. Add rice, stir. Add broth and salt; stir. Cover, simmer 25-30 minutes or until rice is tender and liquid absorbed. Stir in nuts and parsley. Makes 6 servings. |
